Eating Locally: Quark from Clock Shadow Creamery {Milwaukee}

Have you heard of quark?  I hadn't until I sampled it at Milwaukee's Big Taste from the Clock Shadow Creamery table.  I tried it again at the Eat Local Resource Fair, and was excited to find it available at Woodman's when I went grocery shopping this week.

I love that Woodman's carries local products because I can support Clock Shadow Creamery without driving to Walker's Point.  I also love Clock Shadow's cheese curds, which are also available at Woodman's.

According to a handout I picked up at the Eat Local Resource Fair, quark can be used in recipes that call for cream cheese, sour cream or ricotta.  I tried it out this morning for breakfast on my favorite bagel from Bagels Forever (in Madison) and it was great!

More ideas from the handout on how to use quark include...
  • crêpe and blintz filling
  • mix in honey and dip with fruit
  • vegetable and herb dips
  • taco dip
  • potato quark soup
  • combined with mashed potatoes
  • cheesecake

Tonight, I plan to make pizza with a quark base, similar to a pizza I ordered at The Yard at The Iron Horse Hotel.  Then I'll top the quark with ratatouille toppings, as inspired by my lunch yesterday...here's hoping it turns out!

  1. I love the clock shadow creamery quark too! I'll have to pick some up at Woodman's when I get out there next week. It looks so yummy on that bagel.

    1. At the MF Woodman's it's located just under the Organic Valley cheese. It took me quite awhile to notice it there. Luckily, an Organic Valley coupon forced me to check out that section of Woodman's enormous cheese area :)

  3. I love the Quark too - fell in love with it at a Milk Marketing Board Reception at Melthouse Bistro earlier this year. Then of course I had to try it again at the Local Resource Fair a few weeks back. I have to get myself some right away!
