With all the gorgeous produce I picked up at the Dane County Farmers' Market yesterday, I immediately started planning meals to ensure everything would be used by the time our first CSA box arrives this Thursday!
The combination of red leaf lettuce, strawberries, feta, toasted almonds and balsamic vinaigrette
dressing makes a fantastic summer salad.
For the dressing, I use a ratio of a 1 tablespoon balsamic vinegar to a 1/2 tablespoon of olive oil and a 1/2 tablespoon of Dijon mustard.
Strawberries and red leaf lettuce are now checked off my list of farmers' market items to use, and rhubarb buckle is in the oven.
