Oscar night calls for snacks, and when watching TV for 4 hours I find it's better to have snacks that involve lots of vegetables :) I'm watching the red carpet now, and hoping the show isn't too boring this year as I fear it will be without Hugh Jackman hosting.
The first dip I made was a spinach-pesto dip, that's very easy to make and also very tasty. For veggies, I cut up two bell peppers, a bag of carrots and a bag of sugar snap peas.
This recipe comes from the same source as the sweet raspberry dip I made last week, which is the March 2012 issue of Real Simple. The only change I made was to add a little mayonnaise which made it taste much more like a dip.

Spinach-Pesto Veggie Dip
Prep Time: 5 minutes
Cook Time: N/A
Ingredients (serves 4-6)
- 1 cup plain Greek yogurt
- 1/3 cup mayonnaise
- 10oz frozen chopped spinach, thawed and squeezed dry
- 1/4 cup pesto
- 1/4 teaspoon coarse salt
- 1/4 teaspoon black pepper
Instructions
- In a small bowl, mix together all ingredients.
- Serve with cut-up vegetables such as carrots, bell peppers, and sugar snap peas.

The second dip I made was a baked feta dip with roasted red peppers and artichokes, paired with a multi grain baguette. This dip would also be great with pita chips or toasted pita bread.
Chris and I have become quite addicted to Trader Joe's lately, and have been there twice in the past 7 days. In addition to the baguette, I also used marinated artichokes and fire roasted red peppers from TJ's.
Baked Feta Dip
Prep Time: 5 minutes
Cook Time: 20 minutes
Ingredients (serves 10)
- 12 oz jar marinated artichoke hearts, drained and chopped
- 7 oz jar roasted red peppers, drained and chopped
- 1/2 cup plain Greek yogurt
- 1 cup crumbled feta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 garlic cloves, minced
Instructions
- Heat oven to 350 degrees.
- Mix together the artichokes, peppers, feta, mayonnaise, and Parmesan cheese in a bowl; spread into the bottom of a shallow baking dish or ramekins.
- Bake until bubbling on top, 20 to 25 minutes.
